I have mentioned in my prior fitness posts that I follow Trainer Lindsey’s 6 Week Fit Body Challenge program. She has some delicious recipes in her meal plan. One of my favorites is the Muscle Muffins. These little beauties are super satisfying. They are the best protein packed muffins I have ever tasted. Give this recipe a try for some healthy tasty muffins. You won’t be disappointed.
8 egg whites (this is easiest if you buy a carton of egg whites, 8 egg whites is 1 1/2 cups)
1 whole egg
1 1/2 cup oats
1/2 cup Stevia or Splenda (I prefer Stevia)
1/2 cup cottage cheese
1/2 cup applesauce or 1 banana (I prefer the banana)
1 scoop Vanilla Ideallean Protein
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon vanilla
Blueberries or any fruit etc that you would like to add to the muffins (I like to skip this additive)
Blend all ingredients except the blueberries in the blender and pour into WELL GREASED muffin tins. Press blueberries into the muffin batter spreading evenly between all muffins. Bake at 350 for 20-25 minutes. This will make 12 muffins.
The recommended serving is 3 muffins so you will have 4 days of protein packed muffins prepped when you make this batch. I really enjoy them with my morning cup of coffee.
